Butchery Course - 18th August 2008

Learning to cut up Lamb with Lester the butcher. No previous experience needed. All safety equipment and knives provided. Each person will be able to cut up a lamb, which is provided, under the instruction of the butcher. This will include boning cutting, tying joints even sharpening knives etc. The day is from 9.30 until 16.00hrs with a Cornish lunch provided.

Cost for the whole day is £100 per person.

 
 
Meat: The Dupath Way
On Dupath Farm all animals are reared in a semi-organic system, using clover to reduce the need for artificial fertilisers. This helps to maintain a natural ecological balance of the soil.  

All the animals are slaughtered locally, minimising any stress to the animal. The meat is then cured in the traditional way in order to accentuate the natural flavours.
